Describe the evaporator inlet and outlet
State the actual juice mass flow, inlet soluble-solids reading, suspended material and temperature at the concentration-section inlet. Define the target concentrate, maximum holding expectations and product sampling method. Measure refined feed after any separation rather than converting whole-fruit intake directly into evaporator feed.
| Interface | Specify | Engineering use |
|---|---|---|
| Juice supply | Measured mass flow, soluble solids and feed temperature | Material and heat-balance basis |
| Concentrate outlet | Target solids, viscosity reference and receiving conditions | Transfer and downstream treatment |
| Vapour/aroma | Required aroma collection or return boundary | Condensate and recovery interfaces |
| Utilities and cleaning | Available services, drain routes and cleaning sequence | Equipment and site integration |
Keep an ideal solids calculation distinct from actual duty
For an initial no-loss comparison, concentrate mass equals feed mass multiplied by inlet solids fraction divided by target solids fraction. This approximation excludes retained solids, product losses and non-product water. Steam demand, heat-transfer area and operating capacity require the actual heat balance and selected evaporator arrangement.
Finish the supply boundary at the selected pack
Document the product state sent to final treatment, the intended bulk bag and container, filling-head compatibility and the conditions used to check the finished package. Concentration alone does not establish an aseptic process or a filled-product shelf life.
